Siu Mai Class Recipe

Siu Mai Recipe (10pcs)

Shrimp 150g
Dry the shrimp and use the knife to pat 50% of it into mash till well mix. The other 50% of it to be cut into small pieces.

Put both shrimp in fridge for 30 minsot


50g plain flour

little salt

15g water

1 egg yolk

Mix all ingredient all together. When it comes to the water, add gradually. make a dough and wrap it to put in a fridge for 30 mins. Roll it as flat as possible and cut out the round shape pieces. Roll thin the edge of it.

other Filling:

150g Organic shoulder pork (20% fat)

2piece small or 1 big Chinese mushroom soaked, remove stem and diced

Put the following seasoning into the pork:
1 tsp soy sauce
1tsp sesame oil
1/2 tsp of salt
1/2 tsp sugar
1 tbsp corn starch
2.5g minced ginger
2.5g minced garlic
1/2 tbsp wine
1/2 egg white

Mix the pork and mushroom together. Stir. Mix all the shrimp and stir in one direction. Pat a few times

Wrap the filling with the wrapper. Add grated carrot on top.

Steam 10 mins after water boiled in a bamboo steamer.
